Spinach Bakers.

Bake potatoes in their jackets then when they are ready gently cut in half. Scoop the potato out of the skins carefully so as not to split them. Put the potato, grated parmesan, greek yoghurt, fresh spinach, butter and grain mustard in a bowl and mix. Then spoon back into the skins. Sprinkle with some more parmesan and pop under the grill till golden.

Jamies Jammy Cake

Baking when it works is so so satisfying. Here is Jamie's Jammy Coconut Cake. The recipe comes from jamie's Great Britain which is my favourite cook book at the moment. I was so proud of this cake that i had to be stopped from walking along the street and giving it to the neighbours!

How can this Happen?

Although i was thrilled to get to go to the Olympics and witness the unbelievable Athletes and try and understand what an incredible machine the human body is I left the Olympic Park very very angry. The main food option was McDonalds. All other food stalls were nondescript and covered away under insignificant tents with hardly any signage of what was being sold. Fish n chips, sandwiches and disgusting coffee and waffles. Isn't it tragic that the government are heralding this event as inspiring for the children of today to keep fit and stay healthy and then Mcdonalds is the main provider of food for all the millions of people that visit the Olympic Park. What a disappointment. I like many other people that visited the Park left hungry if you enjoy eating and putting good ingredients into your body you have no option. I have not even started on Coca Cola.

Smoked Haddock and Mash.

Make some creamy Mashed Potatoes with butter, milk and a spoonful of creamed horseradish. While you are doing that place your smoked haddock under the grill with a dash of olive oil salt and pepper. When the haddock is cooked steam a good amount of spinach. Then poach as many eggs as you need. Boil water in a frying pan add a lid full of vinegar and crack the eggs into the water. When they are just cooked place the mash on a plate then the spinach then the fish and then the egg.

Shaken Not Stirred.

A hidden gem in the heart of London. So hidden I have tried to find it and have given up many a time. Last week i read about it in a magazine fully addressed so went there that night nothing had changed. Dukes bar is home to the best Martini some say in the world. It is a true experience to watch the ritual of one being made. How people drink more than one i shall never know. Dukes Hotel. 35/36 St James Place,London SW1A 1NY.

Gnocchi with Fresh Peas.

Chop tomatoes and fry till soft in olive oil. Then add some cream cheese a small amount of tomato puree and some fresh peas salt and pepper. Cook the gnocchi for 2 or 3 minutes and add to the sauce. Poor over a little extra olive oil and sprinkle with parmesan if desired.
